For me it would have to be Iron Man as well. You have to get all of Stark's missions and Iron Man's missions in order to fight Ultimo. If you get down to one ball in that multiball, you have to start all over.
Easiest would have to be PVZ, Although World War Hulk seems a tad easy because of the Ramp Spam but score wise it's slow.
By easy, I mean that it is either
easy to keep the ball alive,
easy to keep kickbacks on, or
less danger in the outlanes (minimal punishment for missing shots).
Might even be able to put Sorcerer's Lair up there too on the easy side.

If they are easy to complete, then I don't want to know what your hard tables are. Iron Man is a given because of Ultimo alone. Sorcerer's Lair can definitely go on the easy table.

+1 I also find that tables like Excalibur is difficult to get to the wizard mode on and also Shaman is hard to complete. Let's not forget Earth Defense. Mission 3 for Ninja Gaiden places it on one of the hard tables for me personally. Everything else is doable. I guess I should go and defeat Loki now so I can officially say that Thor isn't one of the difficult ones...but it really is.
I pick Epic Quest, because you don't have to be good at pinball to get a good score. This is especially true with the level up system (increases with every game) which increases score values and it doesn't reset.
I personally had a much more difficult time with Thor than I did with Iron Man, but that's just me.

In some cases Thor can be but I find it much easier than most. The Final mission can be difficult because of the nature of some fo the shots involved. Especially the orbit shots when having multiple balls. It's challenging but nothing like Iron Man, Even Fear Itself can be challenging. It's not that Fear Itself is hard some of the missions can indeed frustrate the heck out of you especially the mission before wizard mode.

Thor is not complicated at all, actually. Hit the URN 3 times to open it up, then start a mission. Beat all the missions, then hit the URN 3 more times to shoot it up to start the wizard mode. Pretty standard things on it, really. It's just harder for some people to execute I guess, especially the wizard mode. What I find cool is that if you start SURTUR multiball or the Hela multiball, both are 3-ball multiballs, so you can start one of those up to get practice for the wizard mode, not to mention if you complete both you get 10 million points

That can be avoided by pressing the X button (part of the lighting strike combo). The ball will automatically go up the Armor Ramp.
My issues with Thor is the second Ymir Mission (those darn icebergs) and the Wizard Mode. Just like the Fantastic Four table, sometimes I get some crazy ball bouncing during those modes and it makes it hard to keep the ball(s) under control.
The strangest thing for me is that I've never found Iron Man "extremely hard" as some you guys do. I was able to beat Ultimo on third attempt on Marvel Pinball and I've have beaten him a few times now on ZP2.
El Dorado is easy in terms of keeping the ball alive. Yes, the left outlane isn't very forgiving, but spelling JADE in the in and outlanes gives you an instant 30 second ball save. It's also relatively easy to earn extra balls on that table so you could quite easily get a long game going there. "Completing" the table isn't easy though, with eight (8!) missions to do, and activating the missions is a bit of a chore as well, so I think the table is good both for beginners and advanced players alike.
Hardest table in terms of keeping the ball alive in my opinion is V12. Mostly because of those &%£*ing drop targets and that &%^$ing outlane. In my opinion, it's even harder than Iron Man.
