It's also very surprising that a European company lke Zen is worse with this type of censorship compared to a US company like Farsight.

I've just ordered a 4K tv and was wondering if there is any use in upgrading my PS4 for a PS4 Pro for Zen Pinball FX3?

Sure they can,
with Google's add service you can block certain types of advertisements. And they can also choose another advertisement platform.

Installed it, played it for a few minutes, got frustrated with all the menu / upgrade / buy popus and the weird "upgrade" systems, so removed it within 5 minutes after installing it.

Also no information on if it's going to be a ZEN originals or Williams pack which we're going to see first?

My guess is that we will first see a ZEN Originals pack before a Williams Volume 3 will be released.
